things you must try....

Pinned Image Cheerio Treats
1 cup sugar
1 cup corn syrup
1 cup creamy peanut butter
1 teaspoon vanilla
5 cups Cheerios

In large sauce pan, combine sugar and corn syrup. Bring to boil over medium heat.
Allow mixture to boil for one minute and remove from heat.
Add peanut butter and vanilla to mixture and mix until smooth.
Add Cheerios and mix until coated.
Drop mixture by spoonful onto waxed paper and allow to cool.

What you get is the most yummy cereal treat EVER! Our ECI workers and VI teacher LOVED them!!


I have a secret LOVE relationship with my crock pot because it makes dinner possible in this house! For dinner tonight I made something we've never had...

Brown Sugar and Balsamic Glazed Pork Loin..... OMG!

Boneless pork loin
1 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed
1/2 cup water

For the glaze:
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce

Combine sage, salt, pepper, and garlic over pork, place in crock pot with 1/2 cup of water. Cook on low for 6-8 hours. About 1 hour before serving, make sauce by combining all ingredients for glaze in sauce pan. Heat and stir until mixture thickens. Pour over meat.
*I drained some of the water that was in crock pot before pouring glaze over meat.

It is seriously so good!!

Today was so busy. We literally had someone in our house from 11am- 4:30pm! We met with our new OT therapist today and right after, Madi and Gracie had their one year review for ECI. Thankfully, Madi still qualifies! Brody's VI teacher also had to come out while ECI was out to officially sign papers to start services.
Along with Brody's VI teacher, he will have another specialist (forgot her title) that will help him eventually learn to walk with a sight cane


Brody's blood work came back and he does NOT have Celiac- thank goodness! We still have no answers so we hope we will find out more next month when they do surgery. I'm extremely nervous about his surgery because he will be put on a ventilator and we all know how much he loved that stupid machine while he was in the hospital. So, I just pray he can quickly come back off with no issues right after surgery.
In other news, Ricky will start working 3pm- 2am. It was by choice. We think he will be able to spend a lot more time with the kids and be able to help out more too!
Today was such a beautiful day! I had the windows open and air off until about 4pm and it felt great! I hope the weekend is like this!
